The winery retains the traditional aging process and with this system it produces:

  • Soleras of fine wine. These wines are kept in oak casks following a meticulous biological aging system called Velo de Flor.
  • Muscatel wines. Produced from grapes exposed to the sun, reducing the liquid content of the grape until a must with more than 300 grams of sugar per litre is obtained. Aged using a solera and criadera system, their strength is gradually increased until they reach 15 x 9 degrees Baumé. 
  • •Oloroso Wines. These wines are aged in direct contact with the air (aerobic aging) following a physical-chemical process that prevents the growth of the typical "veils" of fine wines.

They have a bottling plant for red, white and must wines, distributed mainly in the Aljarafe, but also in the city of Seville.

Vínicola del Aljarafe, S.L. has its origins in one of the most distinctive wineries in the town, Bodegas Ventura, belonging to the Castro family. In 1996 it moved to the old Bodega Sierra, where it remains today.
