This family business, founded in 1996, produces oil by crushing olives of the Manzanilla variety on the day they arrive at the mill. Manzanilla, the fine table olive par excellence, is also excellent for oil production, resulting in an oil with personality that has a strong impact on the palate, with a fruity, spicy, bitter and intense flavour. More than just an oil, it is an important ingredient in the kitchen for use in stewing, frying and dressing.
The brand is named after the macaco, which is the basket that is hung around the neck and into which the olives fall directly from the olive tree when the branches are "milked" by hand. In Arahal the olive is still collected using this method.
